Taste Dalmatia, Guided Olive Oil Tasting
This is a 90-minute guided experience built around understanding extra virgin olive oil
properly.
You begin with a welcome drink and an introduction to Dalmatian olive oil culture, the
history of the Oblica variety, how olives are grown and harvested in this region, and
what the production process looks like from grove to bottle.
From there, you move into the tasting itself. You'll taste two different extra virgin
olive oils and learn how to evaluate them professionally, color, aroma, texture,
bitterness, and finish. You'll understand what polyphenols are, why they matter for
health, and how to identify genuine high-quality olive oil versus the processed oils
that dominate supermarket shelves.
The experience is accompanied by a carefully selected spread of local Dalmatian food, cheese balls with olive powder, dough baskets with chickpea and sun-dried tomato spread,
marinated young cheese and olives, cheese from the Island of Pag, Dalmatian ham,
and traditional local bread. Everything on the table comes from local producers.
A glass of authentic Dalmatian wine completes the experience.
The Art of Olive Oil and Wine
For those who want to stay longer, Roko Grebastica offers an extended three-hour
experience that adds a specially prepared main course to the tasting.
The main course options highlight the versatility of olive oil in Dalmatian cuisine,
either grilled sea bass with arugula, cherry tomatoes, and garlic-infused olive oil, or
roast beef tagliata with arugula, cherry tomatoes, and cheese from the Island of Pag.
The meal finishes with a dessert of bourbon vanilla ice cream with lemon-infused olive
oil and salt, an unusual combination that works beautifully.
Local wines are paired throughout.
This extended experience gives you a complete picture of how olive oil sits at the

HOW TO GET TO GREBASTICA
Grebastica is located between Split and Šibenik on the Dalmatian coast, easily
reached by car from either city. The drive from Split takes approximately 45 minutes
